Jazz up lamb chops with this fruity nectarine salsa! Our Recipe Makeover makes these lamb chops not only something a bit different but also lower in calories and fat than fried lamb chops.
Lamb chops can be a healthy meat choice but when fried the calories increase quickly. Instead, cut the fat and up the vitamins by grilling smaller leaner chops and adding nutritious fresh fruit.
Grill lamb chops for 4 minutes each side or until cooked.
To make salsa, combine nectarines, orange flesh, orange juice and ginger in a serving bowl. Mix well. Stir in spring onion and freshly ground black pepper.
Serve immediately or refrigerate before use. Serve salsa over lamb.
