Jazz up lamb chops with this fruity nectarine salsa, adding vitamins A and C! 148 calories and 26g fat lower than fried lamb chops.

Ingredients:

Lamb chops can be a healthy meat choice but when fried the calories increase quickly. Instead, cut the fat and up the vitamins by grilling smaller leaner chops and adding nutritious fresh fruit.

  Recipe Makeover

8 small lamb chops, fat trimmed (about 17 oz. or four 4¼ oz. chops)

3 ripe nectarines, pitted and diced

1 navel orange, peeled and cut into pieces, save remaining juice

1 tsp grated fresh ginger

3 spring onions (green onions), sliced

1 pinch freshly ground black pepper


  Traditional Recipe

4 large lamb chops

1 Tbsp dried rosemary

1/4 cup oil


Directions:

Grill lamb chops for 4 minutes each side or until cooked.

To make salsa, combine nectarines, orange flesh, orange juice and ginger in a serving bowl. Mix well. Stir in spring onion and freshly ground black pepper.

Serve immediately or refrigerate before use. Serve salsa over lamb.

Variations:

This recipe goes well with "Strawberry Summer Salad" and oven-baked potato wedges "Fun Fries".
