A delicious salad to serve with chicken or fish - and a 48% calorie reduction from the traditional recipe!

Suggestions:

Allow an extra 30 minutes chill time.

Ingredients:

1/2 cup rice vinegar (or distilled white vinegar)

3 Tbsp Equal® Spoonful* (or use 4.5 packets Equal® sweetener)

3 cup unpeeled 1/4-inch thick sliced cucumbers, quartered (about 2 medium cucumbers)

2 cup chopped tomato (about 1 large)

1/2 cup chopped red onion

1/4 tsp salt & pepper, or to taste


Directions:

In a medium serving bowl, combine the vinegar and Equal®. Add the cucumbers, tomato and onion. Season to taste with salt and pepper, mix well.

Cover and refrigerate at least 30 minutes before serving.
