Ingredients Convert to Metric

  • 1/2 cup rice vinegar (or distilled white vinegar)
  • 3 Tbsp Equal® Spoonful* (or use 4.5 packets Equal® sweetener)
  • 3 cup unpeeled 1/4-inch thick sliced cucumbers, quartered (about 2 medium cucumbers)
  • 2 cup chopped tomato (about 1 large)
  • 1/2 cup chopped red onion
  • 1 pinch each of salt and pepper, or to taste

Directions:

In a medium serving bowl, combine the vinegar and Equal®. Add the cucumbers, tomato and onion. Season with salt and pepper, mix well.

Cover and refrigerate at least 30 minutes before serving.
