Walnut, Cheese and Carrot Sandwich

- 28.57 g slice lowfat cheese
- 2 tsp light margarine or vegetable spread
- 1/2 small carrot, peeled and grated
- 9.43 g walnuts, roughly chopped (about 4 - 5 walnut halves)
- 2 thin slices multigrain bread (1 oz each)
Directions:
Lightly spread bread with margarine. Layer carrot, walnuts and cheese between bread slices. Serve.
Variations:
If adding mayonnaise (1 tablespoon), use a nonfat variety and allow an extra 36 calories and 0.5g fat.
