A simple, yet nutritious meal.
Serve immediately.
8 3/4 oz broccoli, fresh or frozen
1 1/2 Tbsp safflower oil
1 onion, chopped
1 garlic clove, crushed
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp freshly ground black pepper
4 Tbsp pine nuts
13 oz penne pasta, uncooked
1/3 cup sweet red peppers, sliced (or chopped tomatoes)
Steam broccoli in a steamer over boiling water for 10 minutes. Drain and chop finely.
Heat the oil in the skillet. Fry chopped onion, garlic, oregano, salt and black pepper until golden. Add cooked broccoli and pine nuts. Stir thoroughly and keep hot.
In the meantime, bring about 1 quart of water to a boil. Cook the penne pasta as directed; drain.
Stir the broccoli and pine nut mixture thoroughly into the cooked pasta.
Pile onto a heated serving dish. Garnish with sweet red pepper (or chopped tomatoes) for extra color.
Serve immediately.
Use fresh spinach (1 large bunch - steamed or boiled and finely chopped) instead of broccoli, and chopped tomatoes instead of pine nuts.
