Each serving equals two fruit and veggie servings.

Ingredients:

12 oz sliced smoked turkey

2 cup pitted Northwest fresh sweet cherries

1 mango*, pared and sliced

1 kiwi fruit, sliced

1 cup shredded Napa cabbage

2 Tbsp vegetable oil

1 clove garlic, crushed

2 Tbsp balsamic or red wine vinegar

1 Tbsp honey

1 Tbsp hot dry mustard**

1/2 tsp ground ginger

1/2 tsp salt


Directions:

SALAD: Arrange turkey, cherries, mango and kiwi fruit on shredded Napa cabbage. Drizzle Spicy Dressing over salad.

SPICY DRESSING: Heat vegetable oil and crushed garlic until hot but not smoking; cool and remove garlic. Add remaining ingredients. Makes about 1/3 cup.

Variations:

* One large nectarine may be substituted for mango.
** One tablespoon of your favorite mustard may be substituted.
