Stun your friends with this light entrée salad.

Ingredients:

4 lettuce leaves

8 slices lean roast pork

1 cup chopped fresh fruit (pineapple, peach, apple)

8 3/4 oz grapes

4 rice cakes

1/3 cup nonfat plain yogurt


Directions:

Arrange lettuce leaves and two rolled slices of pork on top of each rice cake.

Combine fruit and yogurt and arrange over pork. Top with grapes and serve.
