Try this colorful rice salad.

Cooking Time: 30 mins
Yield: 12 x 1/2 cup servings
In a large bowl, combine the celery, cabbage, onions, capers, rice, carrot and tomato.
Moisten the combined salad ingredients by mixing the fat-free French dressing into the salad.
Transfer the salad to a serving platter. Garnish the outside rim of the salad with the thinly sliced cucumber.
A little curry powder and some raisins can be added to the salad for an interesting variation. Variations are not included in the nutritional analysis.
Cook the rice ahead (the 35-40 minutes 'cooking time' is for the cooking of brown rice; 30 minutes for regular white rice).
