Ingredients Convert to Metric

  • 6 eggs
  • 4 oz light margarine
  • 1/2 lb low-fat cheddar cheese
  • 6 Tbsp flour
  • 2 lb nonfat cottage cheese
  • 10 oz frozen, chopped broccoli (thawed)
  • 1/4 tsp salt
  • 1 dash black pepper
  • 1 dash paprika (optional)
  • 4 oz jar chopped pimento (optional)
  • 1/2 cup sliced mushrooms, fresh or canned (optional)


Combine all ingredients. Pour into lightly greased casserole dish (2 quart).

Bake in 350°F oven for 1-1/2 hours. Serve hot.


Can be served as a main dish, served with sliced fresh apples and crusty bread (Cuban, Italian or French). Add more salt to taste, if desired.
