Broccoli, egg and 2-cheese side dish.
6 large eggs
4 oz light margarine
1/2 lb lowfat cheddar cheese
6 Tbsp flour
2 lb non fat cottage cheese
10 oz frozen, chopped broccoli (thawed)
1 tsp salt
1 dash black pepper
1 dash paprika (optional)
4 oz jar chopped pimento (optional)
1/2 cup sliced mushrooms, fresh or canned (optional)
Combine all ingredients.
Bake in greased casserole dish (2 quart) for 1 1/2 hours (90 minutes) at 350°F.
Serve hot.
Serve as a main dish (recipes serves 4) with sliced fresh apples and crusty bread (Cuban, Italian or French).
