Yield: 8 x 1 cup

Broccoli, egg and 2-cheese side dish.

Ingredients:

6 large eggs

114.29 g light margarine

0.23 kg lowfat cheddar cheese

6 Tbsp flour

0.90 kg non fat cottage cheese

285.71 g frozen, chopped broccoli (thawed)

1 tsp salt

1 dash black pepper

1 dash paprika (optional)

114.29 g jar chopped pimento (optional)

1/2 cup sliced mushrooms, fresh or canned (optional)


Directions:

Combine all ingredients.

Bake in greased casserole dish (2 quart) for 1 1/2 hours (90 minutes) at 350°F.

Serve hot.

Variations:

Serve as a main dish (recipes serves 4) with sliced fresh apples and crusty bread (Cuban, Italian or French).
