

'Dress up' your dinner table with this fruity sweet potato side dish.
1 can (40 oz) sweet potatoes, drained and mashed
1 can (8 oz) crushed pineapple in juice, drained
1/4 cup bourbon
1/4 cup brown sugar
1/4 cup golden raisins
1/4 cup shredded coconut
1/4 cup walnuts, chopped
2 tsp pumpkin pie spice
1 tsp salt
1 vegetable cooking spray, as needed
Preheat oven to 350º F.
In large bowl, combine sweet potatoes, pineapple, bourbon, brown sugar, raisins, coconut, walnuts, pumpkin pie spice and salt.
Pour mixture into 2-quart casserole dish that has been sprayed with cooking spray. Bake in preheated oven for 40 minutes.
Orange juice may be used in place of bourbon and pecans in place of walnuts.
