Ingredients Convert to Imperial

  • 1 medium green pepper (about 1/2 lb.)
  • 4 banana, diced fine (about 2 cups)
  • 1/2 Tbsp finely chopped mint leaves
  • 3 Tbsp lime juice
  • 2 Tbsp brown sugar
  • 1 Tbsp extra virgin olive oil
  • 2 jalapeno peppers, seeded, finely diced
  • 1 medium red sweet pepper (about 1/2 lb.), cored, seeded, diced fine

Directions:

Preheat grill on high for 10 minutes. Clean grill with wire brush. Using soft cloth, coat grill lightly with vegetable oil.

Grill whole green pepper to char all sides - about 15 minutes. Remove from grill and place in bowl. Cover with plastic wrap and let rest 5 minutes. Remove from bowl; peel, core, seed, and dice.

Combine all remaining ingredients and green pepper in medium bowl.
