Cranberry Chutney

Yield: 50 x 1 Tbsp servings

Use this chutney as an alternative to traditional cranberry sauce, which is high in sugar.

Ingredients:

1 red onion, finely sliced

1 cup water

3/4 cup dark brown sugar

3/4 cup cider vinegar

2 medium green apples, peeled and diced

1/2 tsp salt

1 tsp grated fresh ginger

1/2 tsp mace

1/2 tsp curry powder

3 Tbsp orange zest

12 oz dried cranberries

1/2 cup currants

1 cup orange juice


Directions:

Bring water to boil. Stir in brown sugar. Add onions and simmer for 30 minutes. Stir in vinegar, apples, seasoning and zest. Simmer slowly for another 30 minutes.

Stir in cranberries, currants and orange juice. Boil for an additional 10 minutes.
