White chili with chicken supper, cooked in a slow cooker, crock-pot - guaranteed to please!

Place chicken in a saucepan or pot. Cover chicken with water until water reaches about 1-inch above the chicken. Add bouillon; stir. Bring to a boil and continue to cook at a boil until chicken is no longer pink.
While the chicken is cooking, dice onion and celery. Sauté onion and celery in butter until cooked. Add onion-celery mixture to slow cooker.
Once chicken is cooked, shred or cut cooked chicken into small pieces; add to slow cooker (do not discard the chicken water). Add beans, tomatoes, chili seasoning, and a little bit of the chicken water to the slow cooker. Stir well. Cook on low for at least 1 hour, or until done.
