A twist on the classic French Onion Soup.

Suggestions:

Cost-saving idea: Cremini (Crimini) mushrooms, the baby version of the Portobello, have the same robust flavor but are less expensive.

Ingredients:

1 1/2 cup diced white onion

2 cup diced Portobello mushroom caps

1 tsp minced garlic

2 cup Kitchen Basics® Vegetable Stock

1/2 tsp salt

1 pinch of freshly ground black pepper, or to taste


Directions:

Spray large non-stick saucepan with cooking spray. Preheat over medium heat.

Add onions and brown 5 to 7 minutes. Add mushrooms and garlic and sauté for 2 to 3 minutes. Add stock, salt and pepper and bring to a simmer for 3 minutes to finish cooking mushrooms. Serve.
