  • 1/2 lb extra lean ground beef (95% lean), browned
  • 2/3 cup sliced carrots
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 3 cup fat-free broth (beef, chicken or vegetable) *
  • 1 1/2 cup chopped cabbage
  • 1/2 cup fresh or frozen green beans
  • 1 Tbsp tomato paste
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/2 cup diced zucchini


In frying pan, brown ground beef, drain off fat.

Lightly spray saucepan with cooking spray. Over low heat, sauté carrots, onion and garlic, until softened, about 5 minutes.

Add ground beef, broth, cabbage, green beans, tomato paste, basil, oregano, and salt. Cover and simmer 20 minutes. Stir in zucchini and heat for 5 minutes. Serve.
