An unusual, but delicious, combination of red cabbage, apple and yogurt.

Ingredients:

3 medium onions, chopped

2 fennel bulbs, chopped

1 1/2 lb red cabbage, shredded

1 large cooking apple (about 8 oz), peeled, cored, chopped

8 oz lowfat plain yogurt

1 Tbsp horseradish sauce

1 tsp salt

1 tsp pepper, or to taste


Directions:

Preheat oven to 300ºF.

In a large casserole dish combine the onions, fennel, red cabbage and apple. Combine the yogurt and horseradish sauce in a small bowl. Stir through casserole; season with salt and pepper.

Cover and bake in preheated oven for 1 1/2 hours, stirring occasionally.

Variations:

Serve as a side dish or serve hot with crusty rolls.
