Ingredients Convert to Metric

  • 8 yellow peaches, halved and stones removed
  • 2 Tbsp superfine sugar (caster sugar)
  • 2 Tbsp maple syrup
  • 2 tsp butter
  • 3 1/2 oz part-skim ricotta cheese
  • 1 tsp vanilla extract

Directions:

Place peach on a grill tray, cut side up. Pour a little syrup over each peach and dot with a little butter. Cook under a hot grill until bubbling and heated through.

In a bowl, mix together ricotta, sugar and vanilla. Serve immediately with the grilled peaches.

Variations:

If desired, can use sugar-free alternatives to caster sugar and maple syrup.
