Tofu Sandwich Spread
Use this spread in the same manner as you would usually use mashed hard-boiled eggs.

Yield: 4 x sandwiches
- 8 3/4 oz tofu
- 1 tsp mild mustard
- 1 pinch of salt
- 1/2 lemon (juice only)
- 3 Tbsp lowfat mayonnaise
- 1/4 tsp turmeric
- 2 Tbsp parsley, chopped
- 2 Tbsp chives, chopped
- 1 pinch of black pepper
Directions:
Drain the tofu and crumble into a bowl.
Add remaining ingredients and stir gently until everything is well mixed.
Season to taste.
