



A delicious meal with light, fresh Italian flavors.
4 vine-ripened Italian tomatoes
1 Tbsp sugar
1 Tbsp balsamic vinegar
8 oz dry fettuccini
2 cup fresh basil leaves, coarsely chopped
1/4 cup shredded part-skim mozzarella cheese
1 Tbsp olive or canola oil
1 Tbsp capers, rinsed and drained
2 Tbsp grated fresh parmesan cheese
Lay tomatoes in a dish and sprinkle with sugar and balsamic vinegar. Allow to marinate for 20 minutes.
Cook pasta according to directions on packet. Combine tomato, basil, mozzarella, oil and capers in a bowl and mix well. Spoon over hot pasta and serve topped with grated parmesan.
Sugar can be replaced by 1 tablespoon of sugar substitute (adjusted recipe = 512 calories, 88g carbs, 4.3g sugars).
