A simple, yet nutritious meal.

Yield: 6 x approx. 1-1/4 cup servings
Steam broccoli in a steamer over boiling water for 10 minutes. Drain and chop finely.
Heat the oil in the skillet. Fry chopped onion, garlic, oregano, salt, and black pepper until golden. Add cooked broccoli and pine nuts. Stir thoroughly and keep hot.
In the meantime, bring 1 quart of water to a boil. Cook the pasta as directed; drain. Stir the broccoli and pine nut mixture thoroughly into the cooked pasta.
Pile onto a heated serving dish. Garnish with sweet red pepper (or chopped tomatoes) for extra color. Serve immediately.
Use fresh spinach (1 large bunch, steamed or boiled and finely chopped) instead of broccoli; and chopped tomatoes instead of pine nuts.
