Ingredients Convert to Metric

  • 1/2 cup thinly sliced celery
  • 1/2 cup shredded cabbage
  • 1/2 cup thinly sliced spring onions
  • 2 Tbsp chopped capers (optional)
  • 4 cup cooked brown rice (or white rice)
  • 1 small carrot (3.5 oz)
  • 1 tomato, seeded and diced (3.5 oz)
  • 1/4 cup fat-free French dressing
  • 1 medium cucumber, unpeeled, thinly sliced


In a large bowl, combine the celery, cabbage, onions, capers, rice, carrot, and tomato.

Moisten the combined salad ingredients by mixing the French dressing into the salad.

Transfer the salad to a serving platter. Garnish the outside rim of the salad with the thinly sliced cucumber.


A little curry powder and some raisins can be added to the salad for an interesting variation.
