A colorful cholesterol free salad.

Suggestions:

Cook the rice ahead (the 35-40 minutes 'cooking time' is for the cooking of brown rice; 30 minutes for regular white rice).

Ingredients:

1/2 cup thinly sliced celery

1/2 cup shredded cabbage

1/2 cup thinly sliced spring onions

2 Tbsp chopped capers (optional)

4 cup cooked brown rice (or white rice)

1 small carrot (3.5 oz)

1 tomato, seeded and diced (3.5 oz)

1/4 cup fat-free French dressing

1 medium cucumber, unpeeled, thinly sliced


Directions:

In a large bowl, combine the celery, cabbage, onions, capers, rice, carrot and tomato.

Moisten the combined salad ingredients by mixing the fat-free French dressing into the salad.

Transfer the salad to a serving platter. Garnish the outside rim of the salad with the thinly sliced cucumber.

Variations:

A little curry powder and some raisins can be added to the salad for an interesting variation (allow extra calories).
