Chill, then serve immediately.
2 large carrots, finely grated
2 large green apples, grated
1 large banana, thinly sliced
1/2 cup raisins or currants
1 squeeze of lemon juice
Mix all ingredients together.
Squeeze lemon juice over to prevent browning of apple and banana.
