An easy dish of tofu slices baked in barbecue sauce.

Ingredients:

17 1/2 oz light firm tofu (such as Nasoya) *

2 large onions, thinly sliced

1 cup low-sodium barbecue sauce *


Directions:

Squeeze any excess water from the tofu. Slice the block of tofu across its short end into 1/4-inch slices.

Place the onions in a baking dish and pour 1/4 cup of barbecue sauce over them. Add the tofu and the remaining sauce. Marinate in the refrigerate for several hours.

Preheat the oven to 350ºF.

Bake the tofu and onions for 20 to 30 minutes until the sauce is bubbling hot (the tofu can also be cooked on the grill, brushing frequently with barbecue sauce.)

Variations:

Calories, fat, sodium and calcium content may vary, depending on the tofu and barbecue sauce.

Serve the dish over rice or stuff it into pieces of crusty French bread. Add a side dish of steamed vegetables.
