A quick and delicious pizza!

Suggestions:

Add your favorite fresh herbs for extra flavor.

Ingredients:

1 large pita bread

10 oz can tomato puree

1 small green bell pepper, chopped

1/2 cup lowfat shredded mozzarella cheese (2 oz)

3 artichoke hearts, no oil, drained

1 red onion, peeled and sliced

1/4 cup black olives, pitted and sliced

1/2 cup eggplant, coarsely chopped

1/2 cup sliced mushrooms (2 oz)

1 1/2 oz baby spinach, washed, drained and torn into bite-size pieces


Directions:

Preheat oven to 400°F.

Spread a layer of the tomato paste onto the pita bread. Scatter the remaining ingredients, except the spinach leaves, over the top.

Bake in a hot oven for 15 to 20 minutes or until the pizza base is crispy and the top is heated through. Scatter torn spinach leaves over the hot pizza and serve.
