No cholesterol and big on flavor!

Suggestions:

1/4 cup Egg Beaters is equivalent to 1 egg. Powdered egg replacer is available from your market (1 teaspoon is equivalent to 1 egg).

* Please carefully check the ingredients of these products to ensure they contain no gluten and/or dairy, if a gluten-free and/or dairy-free recipe is required.

Ingredients:

1 small onion, sliced

1 tomato, sliced

1 tsp canola oil

1/4 tsp salt

1/4 cup Egg Beaters (or 2 tsp. powdered egg replacer) *

1/2 green bell pepper, seeded and diced


Directions:

Heat oil in pan and fry onions and pepper for 5 minutes.

Prepare egg replacer according to directions on packet and pour over fried vegetables. Allow liquid egg to run underneath the sides of the omelet. When nearly set, place tomato slices on top and fold over omelet. Remove from pan and serve hot.

Variations:

Yellow, orange or red bell pepper can be substituted for green pepper, if desired.
