Grilled or baked, these delicious vegetable patties complete a meal.

Ingredients:

2 medium Mondial or other yellow potatoes, cooked and mashed

1 zucchini, skin on, grated

1 cup instant oats

1 egg, lightly beaten

1 Tbsp chopped chives

1/4 cup chopped parsley

2 Tbsp barbeque sauce


Directions:

Combine all ingredients and mix well. Shape mixture into 8 patties. Grill (or bake in preheated 350ºF oven) for 15 to 20 minutes.

Variations:

Top with salsa and serve with salad.
