Ingredients

  • 2 medium Mondial or other yellow potatoes, cooked and mashed
  • 1 zucchini, skin on, grated
  • 1 cup instant oats
  • 1 egg, lightly beaten
  • 1 Tbsp chopped chives
  • 1/4 cup chopped parsley
  • 2 Tbsp barbeque sauce

Directions:

Combine all ingredients and mix well. Shape mixture into 8 patties. Grill (or bake in preheated 350ºF oven) for 15 to 20 minutes.

Variations:

Top with salsa and serve with salad.
