Beef and Veal: Beef and Veal Dishes: Moroccan Beef

1 tsp crushed garlic 1 Tbsp olive oil 1 onion, chopped 1/3 cup slivered almonds 1/2 cup raisins 1 tsp ground turmeric 1 tsp ground cumin 1 Tbsp sugar 1 (14 oz) can tomatoes, with their juice 2 oz spinach, shredded Directions:
Slice across the grain of the steak in very thin strips. Mix beef strips with garlic and half of the oil. Heat wok or skillet on high (no need to add any extra oil). Stir-fry beef strips in small batches for 1 to 2 minutes. Remove when cooked and allow pan to reheat before stir-frying next batch. Heat remaining oil in pan. Stir-fry onion, almonds and raisins for 1 to 2 minutes. Return stir-fried beef strips. Add turmeric, cumin, sugar, tomatoes, and spinach. Allow to heat through, about 1 to 2 minutes. Variations:
