1 large onion, diced 1 medium carrot, diced 2 1/4 lb ripe tomatoes, cored and chopped roughly 2 garlic cloves, crushed 1/4 tsp dried thyme 1 bay leaf 1/4 tsp dried marjoram 1/4 tsp dried marjoram 1/4 cup low-fat plain yogurt, divided Directions:
Pass the soup through a sieve into the pan. Stir in 3 tablespoons of the yogurt. Refrigerate to cool, then serve garnished with the remaining 1 tablespoon of yogurt. Variations:
