1 1/2 Tbsp red wine vinegar 1 1/2 tsp poppy seeds 1 1/2 tsp olive oil 1 tsp Dijon-style mustard 1/8 tsp pepper 5 cup red leaf lettuce, washed, dried, chilled and torn 2 cup baby spinach leaves, washed, dried, chilled and torn 1/2 lb cooked skinless turkey breast, cut into 1/2-inch julienne 1 can (10½ oz) mandarin oranges, juice pack, drained 1 as needed, orange zest Directions:
SALAD: In large bowl toss together lettuce, spinach, turkey, and oranges. Pour dressing over turkey mixture. Garnish with orange zest and serve immediately. Variations:
