2 Tbsp sugar 1 cup skim milk 1 tsp vanilla extract Directions:
In a bowl whisk together eggs and sugar: gradually adding hot milk. Return mixture to pan and cook on medium heat, stirring constantly with a wooden spoon for 3 to 5 minutes or until slightly thickened. Remove from heat and strain through a fine sieve into a clean bowl. Stir in vanilla. Cool and refrigerate until chilled; or, serve warm if serving as a sauce. Variations:
