Fish and Shellfish: Fish Dishes: Smoked Salmon Pasta

3 cup raw broccoli florets 4 oz raw snow peas, cut in halves 1/2 cup fat-free half-and-half * 6 oz hot-smoked salmon, flaked ** 1/4 cup shredded Parmesan cheese 2 Tbsp chopped Spring/green onions 1 pinch cracked black pepper Directions:
Add broccoli; cook 3 minutes. Add snow peas; continue cooking 1 to 2 minutes or until pasta is tender. Drain. Return pasta mixture to pan. Stir in salmon and half-and-half. Reduce heat to low; cook until heated through, stirring occasionally. Add Parmesan cheese; toss to coat pasta. Sprinkle with green onions. Season to taste with cracked black pepper. Variations:
** Regular smoked salmon can replace hot-smoked, if desired. Serving suggestions are not included in the nutritional analysis. (Per Serving)
