1 medium carrot (3.5 oz), finely chopped 1 medium onion (3.5 oz), finely chopped 2 sticks celery (5 oz) 2 cloves garlic, crushed 1/2 cup wholewheat flour (2 oz) 1 1/2 tsp curry powder 1/4 tsp salt 1/4 cup dried breadcrumbs 2 Tbsp canola oil 2 Tbsp dried breadcrumbs (extra) Directions:
Form into 12 patties and dip into extra bread crumbs. Shallow fry in oil for about 5 minutes on each side. Patties can be served either hot or cold. Variations:
