1/4 cup superfine sugar 1 large egg 2 Tbsp ground almonds 1 tsp ground cinnamon 2 Tbsp all-purpose flour 1 Tbsp Amaretto liqueur (or a few drops almond essence) 1 can (15-1/2 oz) chunky fruit salad in natural juice, well drained 1 Tbsp powdered sugar (for dusting) Directions:
Whip butter and superfine sugar together until pale and fluffy. Beat in the egg, almonds, cinnamon, flour, and liqueur until smooth. Turn the mixture into prepared pan. Smooth the surface and attractively arrange fruit salad pieces over the top. Bake in preheated oven for 35 to 40 minutes or until light golden brown. Let stand for 1 to 2 minutes; serve from dish.
