2 eggs 1/4 cup skim milk 2 tsp wholegrain or coarse-grain mustard 2 Tbsp reduced-fat cheddar cheese, grated 2 snipped chives for garnish 2 English muffins, split Directions:
Lightly whisk together eggs, milk, mustard and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled. Spoon over muffins, sprinkle with chives and serve. (Per Serving)
