Spiced-up breakfast English muffins.

1 tomato, sliced
1/4 cup skim milk
2 tsp whole-grain or course-grain mustard
2 Tbsp grated low-fat cheddar cheese
2 chives, snipped (for garnish)
Lightly whisk together eggs, milk, mustard, and cheese and pour into a small non-stick saucepan. Cook without stirring until mixture sets around the edges, then stir occasionally until scrambled.
Spoon over muffins. Sprinkle with chives and serve.
