Suggestions: To prevent wrappers from drying out, make sure they are kept covered with a damp tea-towel.

1 tsp grated ginger
1 carrot, grated
1/2 cup finely chopped cabbage
2 green onions, chopped
1/2 cup chopped beansprouts
1/2 cup grated reduced-fat cheddar cheese
8 3/4 oz packet wonton wrappers
1/2 cup low-sodium soy sauce, extra for serving
1 tsp cornstarch
Place a tablespoon of mixture into the center of each wonton wrapper, brush edges with water, bring all corners in together and twist. Repeat with remaining mixture.
Place dim sims in a shallow pan with enough boiling water to cover and simmer for 3 to 4 minutes or until tender. Drain and serve with extra soy sauce.
