1/2 cup shredded cabbage 1/2 cup thinly sliced spring onions 2 Tbsp chopped capers (optional) 4 cup cooked brown rice (or white rice) 1 small carrot (3.5 oz) 1 tomato, seeded and diced (3.5 oz) 1/4 cup fat-free French dressing 1 medium cucumber, unpeeled, thinly sliced Directions:
Moisten the combined salad ingredients by mixing the fat-free French dressing into the salad. Transfer the salad to a serving platter. Garnish the outside rim of the salad with the thinly sliced cucumber. Variations:
