Succulent sweet potato soup with a dash of curry.

Preparation Time: 10 mins
2 cloves garlic, crushed
1 medium onion, chopped
1 tsp mild curry powder
1 lb sweet potato, peeled and chopped
2 cup water
1 vegetable stock cube, crumbled
1 1/2 cup soy milk
Blend or process sweet potato mixture until smooth. Gradually add soy, processing until well combined.
Return to saucepan and heat through but DO NOT BOIL.
