1 onion, chopped 2 cloves garlic, chopped 2 skinless chicken breast fillets, diced 3 cup long grain rice 5 cup reduced sodium chicken stock 1 pinch saffron threads, dissolved in 1 tablespoon water 2 1/4 lb assorted seafood (green prawns, calamari, mussels, octopus)* 1 green pepper, sliced 1 cup green peas 3 1/2 oz sliced pepperoni Directions:
Arrange the seafood, green pepper, peas and pepperoni in the paella. Cook over a very gentle heat for 20 to 30 minutes or until all the stock has been absorbed and the seafood is cooked. Variations:
