1 garlic clove, crushed 1 Tbsp tomato paste 1 tsp freshly ground black pepper 1/2 cup water 1 tomato, sliced 2 tsp parsley 8 oz lean ground beef 1 Tbsp light margarine Directions:
Cut zucchini in half lengthwise and scoop out centre. Chop flesh. Heat margarine in skillet. Add garlic and fry 2 minutes. Add meat and brown well. Stir in tomato paste, chopped zucchini flesh and pepper to taste. Spoon mixture back into zucchini shells. Place in shallow baking dish and pour around water. Cover and bake in oven until tender.
