1 strip lean bacon
1 medium egg
2 oz reduced fat cheese
8 3/4 oz cooked pasta
2 1/2 fl. oz nonfat evaporated milk
In a non-stick saucepan, sauté bacon and onion until cooked (about 4 minutes).
In a small bowl, whisk egg and milk; add cheese.
Toss bacon and onion through hot pasta, add milk mixture and return to low heat. Stir through for 1 minute.
