A versatile sauce especially suited to steak.

1 lean bacon strip, chopped
2 medium chopped carrots
2 sticks celery
1 Tbsp canola oil
2 Tbsp flour
3 cup water
2 Tbsp tomato paste
1 beef stock cube
1 bouquet garni sachet (herbs & spices, such as parsley, thyme, bay leaf - tied together in cheesecloth)
Add tomato paste, stock cubes and bouquet garni sachet. Simmer sauce very slowly for 2 hours stirring occasionally.
Remove bouquet garni and blend or sieve through a strainer. Return sauce to pan and boil to reduce quantity if a very thick sauce is needed.
