1 small onion, finely chopped 1 small carrot, finely chopped 1 stick celery (1 oz), finely chopped 1/2 apple, finely chopped 1 Tbsp curry powder 2 Tbsp flour 10 fl. oz fat-free reduced-sodium chicken stock 1/2 tsp salt (or 1 tsp Lite salt) 1 tsp black pepper (or to taste) 1/2 Tbsp chutney 1 Tbsp unsweetened lime or lemon juice cordial Directions:
In non-stick saucepan, add meat, onion, carrot, celery, apple, and curry powder, and cook until well browned. Combine flour, chicken stock, salt, and black pepper, and add to meat mixture. Bring to a boil, reduce heat, cover and simmer gently for 1-1/2 hours or until meat is tender. Just before serving, add chutney and juice cordial. Variations:
