1 oz slice lowfat cheese
2 tsp light margarine or vegetable spread
1/2 small carrot, peeled and grated
1/3 oz walnuts, roughly chopped (about 4 - 5 walnut halves)
2 thin slices multigrain bread (1 oz each)
Lightly spread bread with margarine. Layer carrot, walnuts and cheese between bread slices. Serve.
If adding mayonnaise (1 tablespoon), use a nonfat variety and allow an extra 36 calories and 0.5g fat.
