Baking: Cakes, Cookies, Muffins: Sticky Date Cake

A lovely moist cake, a great choice as a healthy alternative to Sticky Date Pudding. Makes a nice food gift too!

Ingredients:

    4 oz dates, pitted and chopped
    1 1/2 cup hot tea
    1 Tbsp oil
    1/2 cup powdered sugar substitute
    2 eggs, lightly beaten
    1/2 cup nonfat milk
    2 tsp vanilla
    2 cup self-rising flour
    1/4 tsp baking powder

Directions:

    Preheat oven to 375°F. Grease and line a 10" x 6" loaf pan.

    Place dates, tea and oil in a saucepan and bring to a boil. Simmer for 3 to 4 minutes. Remove from heat and allow to cool.

    In a mixing bowl, combine eggs, milk, sugar and vanilla. Fold in sifted flour and baking powder. Pour in date mixture and mix until just combined.

    Pour into prepared pan and bake in preheated oven for 35 to 40 minutes.

Variations:

    Drizzle slices of cake with a tablespoon of warm, low-fat custard sauce before serving.
