Vegetarian: Dips and Spreads: Tofu Sandwich Spread

Use this spread in the same manner as you would usually use mashed hard-boiled eggs.

Ingredients:

    8 3/4 oz tofu
    1 tsp mild mustard
    1 pinch of salt
    1/2 lemon (juice only)
    3 Tbsp lowfat mayonnaise
    1/4 tsp turmeric
    2 Tbsp parsley, chopped
    2 Tbsp chives, chopped
    1 pinch of black pepper

Directions:

    Drain the tofu and crumble into a bowl.

    Add remaining ingredients and stir gently until everything is well mixed.

    Season to taste.
