Appetizers, Dips and Snacks: Appetizers and Tapas: Scallops with Spicy Papaya Sauce

Ingredients:

    1 small papaya, peeled, seeded & chopped
    1 red bell pepper, chopped
    1/2 red onion, chopped
    2 Tbsp fresh lime juice
    1 Tbsp chopped fresh cilantro
    1 tsp minced jalapeņo peppers
    2 Tbsp all-purpose flour
    1 lb sea scallops
    1 dash of salt
    1 dash of black pepper, or to taste
    1 Tbsp olive oil

Directions:

    In a medium bowl, combine papaya, red bell pepper, onion, lime juice, cilantro, and jalapeņo. Set aside.

    In a large resealable plastic bag, combine flour, scallops, salt, and black pepper, and shake to coat.

    In a large skillet, heat oil over medium heat and add scallop mixture; cook and stir until golden. Place scallops over papaya sauce and serve immediately.

Variations:
