Vegetarian: Dips and Spreads: Tofu Mayonnaise

A tasty, lower-fat, higher-protein mayonnaise.

Suggestions: This recipe contains no eggs and very little oil. It can be used in place of regular mayonnaise.

    2 garlic cloves, to taste
    1 Tbsp roughly chopped chives
    2 Tbsp roughly chopped parsley
    1/2 tsp mustard powder
    1/4 tsp sugar
    1 juice of 1 lemon
    1/4 cup vegetable oil
    1 Tbsp white wine vinegar
    1 pinch of salt
    1 pinch of black or white pepper
    10 oz firm tofu, crumbled


    Chop garlic (amount to taste), chives and parsley. Don't be overly generous with the garlic or the dressing will taste of little else.

    Add mustard, sugar, lemon juice, oil, vinegar, salt, pepper, and tofu. Blend until the mixture is smooth and creamy.

    Refrigerate in a screw-top jar for several weeks if desired.
