Vegetarian: Dips and Spreads: Tofu Mayonnaise

1 Tbsp roughly chopped chives 2 Tbsp roughly chopped parsley 1/2 tsp mustard powder 1/4 tsp sugar 1 juice of 1 lemon 1/4 cup vegetable oil 1 Tbsp white wine vinegar 1 pinch of salt 1 pinch of black or white pepper 10 oz firm tofu, crumbled Directions:
Add mustard, sugar, lemon juice, oil, vinegar, salt, pepper, and tofu. Blend until the mixture is smooth and creamy. Refrigerate in a screw-top jar for several weeks if desired. (Per Serving)
